During its first year of participation in the Healthy Schools program, West Babylon High School (WBHS) has experienced quite a stir in its kitchens, classrooms and hallways. Posters touting the benefits of exercise and good food choices decorate the halls and everyone from staff in the kitchen, to teachers, and students are working together to adopt healthier behaviors such as starting the day with a healthy breakfast. With the help of community supporters and many concerned members of the WBHS staff and student body, students and staff are eating smarter and healthier--and loving it!

State-of-the-art ovens and ranges have replaced the fryers in the kitchen and now assist the kitchen professionals in creating a variety of home-cooked, healthy meals including: spaghetti and meatballs, chicken and rice and burritos. In the cafeteria, the high-quality, low-fat, whole-grain wraps, fresh-fruit salads, and yogurts are all big hits. Bottled water has also become the drink of choice.

The vending machines have been overhauled as well, offering granola bars and pretzels, 100% juice and low-fat milk. Even the school store has contributed to the healthier environment by halting sales of cookies containing unhealthy trans-fats. In their Consumer Sciences class, where students practice how to create delicious, nutritious meals with healthier ingredients, they also learn about saturated-fats and how to identify and avoid unhealthy foods and ingredients. As a special treat, sometimes the students invite the staff to taste the meals they have prepared.

By eliminating store-bought, fat-laden products from their bake sales, student clubs are joining the effort to encourage healthier fundraisers. The swim team, the Tempo Literary Magazine and other groups have found that when they offer homemade baked goods such as apple crisps, their sales are brisk and they can still raise lots of money without compromising anyone’s health.
