Yakitori Chicken Noodle Bowls Recipe

Try this delicious Rachael Ray recipe for Yakitori Chicken Noodle Bowl! 


Makes 100 servings.


Yakitori Chicken (Serving size: 2 oz)

  • 12.5 lbs USDA diced chicken or unbreaded chicken nugget
  • 1¼ cups sesame oil
  • 2.5 cups pineapple juice
  • 2 teaspoons ground ginger
  • Yakitori sauce (see corresponding recipe)
  1. Marinate chicken in sesame oil, pineapple, juice and ginger combination for 1 hour prior to cooking.
  2. Cook chicken according to manufacturer’s directions or for USDA diced chicken cook to 170 degrees.
  3. Put cooked chicken into kettle and stir to coat with prepared Yakitori sauce.
  4. Place chicken into 2 inch steam table pans for serving.


Yakitori Sauce (Yield: 6.25 cups)

  • 1/4 lbs scallions, diced
  • 3 tablespoons jarred garlic, chopped
  • 2 tablespoons jarred ginger (or 2 teaspoons ground)
  • 5 cups pineapple juice
  • 4 cups low sodium soy sauce
  • 1/4 cup sesame oil
  1. Heat sesame oil in steam kettle on medium heat.
  2. Cook scallions, garlic and ginger until soft and aromatic about 5 minutes.
  3. Add liquids and bring to a boil.
  4. Reduce heat and simmer until reduced by one-third about 10 minutes.


Yakitori Noodles (serving size: 3/4 cup)

  • 14¼ lbs whole-grain spaghetti
  • 1/4 lbs scallions, diced
  • 5 cups pineapple juice
  • 5¾ cups low sodium soy sauce
  • 1/4 cup sesame oil
  • 1/3 lb (approx.) sesame seeds, to garnish
  • 2.9 lbs chow mein noodles
  1. Cook spaghetti according to package.
  2. Cook scallions in sesame oil in kettle or tilt skillet until slightly soft (4 minutes).
  3. Add liquids and bring to a boil. Then reduce heat and simmer until reduced by one third.
  4. Add cooked noodles and toss to combine.
  5. Place in 2 inch deep steam table pan.
  6. Garnish with sesame seeds and chow mein noodles when serving.


Snow Peas

  • 35 lbs frozen snow peas
  1. Cook peas according to package.
  2. Place into 2-inch steam table pans for serving.

  • Serve in a 30 oz bowl.
  • Put 3/4 cup noodles in bowl.
  • Add 1 cup of snow peas.
  • Add 2 oz chicken nuggets or 2 oz of diced chicken.
  • Garnish with toasted sesame seeds and serve with 1/4 cup chow mein noodles.
  • First time serving you may want to try skewering the nuggets with a chopstick on the serving line.
