About the Recipe

Martha likes to serve this meal with house made salsa, freshly minced white onion and cilantro, and homemade Mexican white rice.  

Martha learned this recipe from her husband who is from Zacatecas. This is a traditional recipe that is enjoyed during special occasions like birthdays, graduations, and other celebrations. Martha's family loves this recipe, and they hope you can enjoy  it as well.  


Ingredients

  • 5 pounds top sirloin 
  • 1 head peeled garlic 
  • 7 whole cloves 
  • ¼ teaspoon oregano 
  • ⅛ cup vinegar 
  • 5 guajillo chiles, deseeded 
  • 2 chiles de árbol, deseeded 
  • 2 teaspoons salt  

Directions

  1. Place sirloin in a large pot. 
  2. Add about 5 cups of water, garlic, cloves, oregano, vinegar, chile guajillo, chile de arbol, and salt to taste in a blender. Thoroughly blend until smooth. Taste and add more salt if necessary. Strain if there are any chunks. 
  3. Add mixture to meat in pot and bring to a boil over high heat. 
  4. Cover the pot and simmer on a low heat for 3–5 hours. Check on the sauce to make sure it is not burning every so often. If you notice rapid boiling, lower heat. 
  5. Gently tug on the meat to check if it is fork tender. Once the meat is fork tender it is ready to be enjoyed.
