Carne Asada

About the Recipe

It’s a Mexican dish and my family makes it as the main dish at most of our family events. This flavorful steak is enjoyed at many fiestas year after year! 


Ingredients

  • 2 pounds skirt steak, trimmed,  cut into 6 inch pieces 
  • 2 limes, zested and juiced 
  • 1 navel orange, zested and juiced 
  • 1 chipotle chili, chopped 
  • 1 tablespoon adobo sauce 
  • 2 coarsely chopped scallions 
  • 3 garlic cloves, peeled and chopped 
  • 1 tablespoon canola oil, plus more for grilling 
  • 1 tablespoon Worcestershire sauce 
  • 1 cup chopped fresh cilantro leaves 
  • 2 1/2 teaspoons ground cumin 
  • 2 teaspoons kosher salt, plus more to taste 
  • 1 teaspoon coarsely ground black pepper, plus more to taste 

Directions

  1. Place steak in an oven-safe dish. Bake at 400 degrees for 15 minutes. 
  2. In a large bowl, mix lime and navel orange juice, chipotle chile, adobo sauce, scallions, garlic, oil, Worcestershire sauce, cilantro, cumin, salt and pepper. 
  3. Put steak pieces in the mixture and let marinate for an hour. 
  4. Once fully marinated, place steak on hot grill and cook for approximately seven minutes on each side.
