Enchiladas de Pollo

About the Recipe

I come from a large Mexican family that would stretch out every meal as much as possible. This is a recipe that can be made with just cheese or chicken. When you are trying to feed more then 10 people on a budget, this is a great recipe that helps feed everyone without feeling left out. In Mexico some families do not have the luxury to have meat and cheese on every meal so when it is available it is valued. As the saying goes "donde come uno comen todos" meaning where one eats, everyone can eat. 


Ingredients

  • 1 large chicken breast 
  • 1 onion 
  • 1 teaspoon salt 
  • 2 garlic cloves 
  • 6 guajillo chiles 
  • 2 arbol chiles 
  • 1 tomato 
  • 1 tablespoon whole cumin seeds 
  • 2 tablespoons chicken bouillon 
  • 2 cups water 
  • 2 teaspoons oil 
  • 1 pound shredded mozzarella cheese 
  • ½ head shredded iceberg lettuce 
  • 5 radishes 
  • 3 avocados 
  • 6 tablespoons Mexican cream 
  • 6 tablespoons cotija cheese 
  • 30 tortillas   

Directions

  1. Add water to a large pot. Add chicken breast, ⅓ onion, salt, garlic and bring to a boil. Save 3 cups of this chicken stock. 
  2. Boil chiles and tomato. Blend rehydrated chiles and tomato with ⅓ onion, cumin, chicken bouillon and 2 cups water. Blend until a smooth sauce mixture. 
  3. Add this sauce mixture to a stock pot with 2 tsp of oil on medium heat. Bring to a boil. 
  4. Add 3 cups of chicken stock to sauce and bring to a boil. Once sauce boils, remove from heat and set aside. 
  5. Shred chicken breast and lettuce. Slice radishes, ⅓ onion and avocado. 
  6. Warm up tortilla, dip in sauce mixture, fill with chicken and cheese, roll up. (5xs) 
  7. Top with sauce and mozzarella. Melt in microwave 30 seconds. Top with lettuce, radishes, onion, avocado, cotija cheese and cream.
