Arroz con Pollo

About the Recipe

When I was a little girl, my parents raised chickens. We grew up eating a lot of chicken; my parents would cook many delicious meals with chicken. One of my favorites was Arroz con pollo (Chicken with rice). My siblings and I were always excited for that plate. 


Ingredients

  • 1 whole, small or medium chicken 
  • Salt to taste 
  • 1½ onion 
  • 3 cups rice 
  • 2 tablespoons olive oil 
  • 1 large tomato, chopped 
  • 1 clove garlic   

Directions

  1. Fill a large pot halfway with water. Add chicken, salt and half an onion and bring to a boil. 
  2. Once chicken is fully cooked, remove from pot and shred (save the chicken water/broth). 
  3. Add half cup of the reserved chicken broth, tomato, garlic, and remaining onion to a blender. Blend and set aside. 
  4. Place rice in a bowl and rinse with cold water. Make sure to drain all the water. 
  5. In a large pot, heat oil over medium heat and add rice. 
  6. Once rice starts to turn translucent, approximately 10 to 12 minutes, add the mixture from the blender. 
  7. Add more chicken broth (3 to 4 cups) to the pot, cover and bring to a boil. Add the shredded chicken and mix into the rice, reduce heat to low and cover. Cook for 20 to 25 minutes until rice is fully cooked and all the broth has been absorbed.
