Beef and Broccoli

Christina Moreno, a Mexican national born in Jalisco, moved to the United States where she married her husband, who originated from China. "Growing up, we both had a close bond with our great-greatgrandmothers. As a result, we have a pride and honor in our heritage and food, which we passed on to our children and grandchildren." The love for food they both had incorporated both of their Chinese and MexicanAmerican heritage in a fun and unique way. "My husband passed away a few years ago, so one way we keep him in our hearts is by making some of his favorite dishes. I learned his recipes after being married for so many years. When passing down traditions, you have this other culture that's a part of you." 


Ingredients

  • 1 pound broccoli 
  • 1 pound flank steak 
  • 2 tablespoons cornstarch 
  • ½ cup water 
  • 2 tablespoons olive oil 
  • ¼ cup low-sodium soy sauce 
  • 2 tablespoons dark brown sugar 
  • 2 garlic cloves, minced 
  • 1 teaspoon fresh ginger, grated 
  • ¼ cup hoisin sauce 
  • 4 cups of cooked white rice 
  • ¼ teaspoon red pepper flakes
  • Teriyaki sauce (optional) 
  • Sesame seeds (optional)  

Directions

  1.  In a mixing bowl, add 1 tablespoon of cornstarch and ½ cup of water and mix until the cornstarch is completely dissolved.Add soy sauce, brown sugar, ginger, garlic, red pepper flakes, and hoisin sauce. Set aside.
  2. Cut the broccoli head into bite-size pieces and set aside.
  3. Cut the flank steak into thin slices. Cut about ¼ inch against the grain and set aside.
  4. Preheat the skillet over medium heat and add broccoli florets and stir. Add two tablespoons of water, cover with a lid, and allow to cook for a few minutes to soften up. Remove the lid and finish cooking until all the water is absorbed. Transfer the broccoli to a plate and set aside.
  5. Cut the flank steak into thin slices. Mix cornstarch and 1 tablespoon of cold water. Toss steak in the mixture to fully coat.
  6. In a large skillet, heat 1 tablespoon of oil on medium-high heat. Add steak and cook for 5-6 minutes or more until beef is cooked through, stirring occasionally. If the meat starts to release too much liquid, just scoop out the liquid and discard. Add broccoli and stir again to combine with meat. Sprinkle some sesame seeds.
  7. Reduce the heat to medium/low and add the sauce mixture. Mix it with the meat and let it cook for a couple of minutes, until it starts to bubble and get thicker.
  8. Follow directions on packaging to cook 4 cups of rice in in a medium saucepan. Or heat your choice of rice in a microwave.
